Anchovy Butter

Ingredients:
2 Small tins of Anchovy Fillets
225g/8oz Unsalted Butter, softened
Black Pepper
A squeeze of Lemon Juice

Instructions:
1. Drain the anchovies and pat dry on kitchen paper.
2. Place in a mixing bowl and mash well.
3. Add the softened butter, pepper and lemon juice and mix until well blended.
4. Place on a sheet of parchment or greaseproof paper, shape into a roll and wrap. Chill until firm.

Use as a topping for vegetables, grilled fish or steak. Alternatively, use soft as a spread for biscuits or canapés.
