Anchovy Stuffed John Dory

Ingredients:
1.4kg/3lb John Dory
1 Egg
2 tbsp Anchovy Essence
Salt and Pepper
2 tbsp Fresh Parsley, chopped
Pinch of Nutmeg
2 tbsp Lemon Juice
100g/4oz Stale Breadcrumbs
75g/3oz Butter
1 Onion, sliced
1 Carrot, sliced
150ml/5fl.oz. Water

Instructions:
1. Clean fish and trim off fins. Wash and pat dry with kitchen paper. Preheat the oven to 200C, 40OF, Gas mark 6 and grease an ovenproof dish.
2. Beat egg in a bowl with anchovy essence, salt, pepper, parsley, nutmeg and lemon juice. Stir in the breadcrumbs and 50g/2oz of the melted butter. Mix well the use to stuff the fish.
3. Arrange the carrot and onions in the prepared dish. Score the top of the fish with a sharp knife to make diamond shapes.
4. Place fish in dish, pour in the water, dot with remaining butter and season. Bake for 30 minutes, basting twice.
5. To serve - lift fish on to serving plate, garnish with some of the onion and carrot, lemon slices and parsley and serve immediately.
